In years that allow, Riesling is picked late in the season to encourage extra concentration and some botrytis (noble rot) influence. Over several weeks
the vineyard is selectively picked on multiple occasions to harvest the fruit at optimum ripeness. This adds extra flavour nuances and gives a mouth-filling lusciousness, with great purity and elegance, similar to Aüslese wines of Germany.
