In years that allow, this noble barrel-fermented Sémillon/Sauvignon is produced. The fruit is left on the vine to develop botrytis. This concentrates the flavours, sugars and acids, producing a complex, sweet wine with a lively non-cloying finish. It is normally aged in old French oak barrels for 2 years prior to bottling giving toasty, savoury overtones.
